This wine is made mixing various white grapes from ancient or rare varieties typical of the local Piemonte and Liguria tradition. There a particular type of Riesling, Verdea, Timorassa, Moscatella (old variety of Chasselas).
These grapes come from 100-year old vines that are part of the Filagnotti vineyard in Tassarolo, nearby Gavi.
Fermentation is done in oak vats with the submerged skins system for about a month. After that, the must is separated and is put back in its vats, where it will rest sur lees for the rest of the year.
Should be enjoyed at cellar temperature. A wine that will age very well.
No sulphites are added at any stage of the prodessing.
